Lobster rolls could come to Maricopa

You probably can’t imagine finding a freshly baked lobster roll in a former stagecoach stop in the middle of the desert, but a New England delicacy may be coming to Maricopa.

Popular Angie’s Lobster Restaurant It filed paperwork last week expressing interest in locating the store on the southeast corner of John Wayne Parkway and Edison Road.

Site plans showed a 1,700-square-foot restaurant with a small seating area, two drive-thru lanes and parking for up to 25 cars.

The proposed location is the former site of Yeezy’s restaurant, which has long upended its promise to open Maricopa. As of last month, the Tucson diner said its plans were “on hold, but we’ll be back again.”

Angie’s Lobster — Launched in Tempe in 2021. Founder of the popular Salad and Go — known for its limited but hearty menu and near-exclusive drive-thru service.

The most popular menu items include combos of grilled or fried lobster rolls with tangy sauce, fries, and lemonade or iced tea for under $10.

The locally-based Atlantic-inspired chain currently has six restaurants in the greater Phoenix area, with two more planned for Chandler and Glendale in the coming months.
